Admin History/Bio
The Perlmutar Bakery, located at 175 Baldwin Street, was opened in 1911 by Arrin Perlmutar who had immigrated to Canada from the Ukraine by way of London, England. He opened the bakery on the main floor of his home while his family of seven lived upstairs. The bakery had a wood-burning brick oven until the 1960s, when the city forced them to convert to electric. The bakery was best known for their onion buns and rye bread. Electric mixers were used for cakes and bread but almost every other step was done by hand. Bread baking was started by 10:00 p.m. so that there would be fresh bread to deliver in the morning. The bakery closed in 1974.

Scope and Content
Accession consists of two photographs of the donor's daughter, Aurelia Mitgang making challah with her father, Ross Mitgang while at home during the COVID-19 pandemic. The following information was priovided by the donor:
My 2-year-old daughter Aurelia is in the Pre-Nursery class at Torah Tots. Every Friday, her teachers give the kids pieces of challah dough to "roll...tap...pull" the challah. This was the frst Friday after the COVID shutdowns started. I decided to provide a semblance of normalcy to my daughter's routine, and we made challah dough from scratch. When the challah was ready to be shaped, I sang the "Roll the Challah" song that she does at daycare. My daughter then put the challah toppings on with my husband, Ross.

Also included is one electronic textual document depicting The Cutting Veg's mission statement, issued as promotional material.
Administrative History
The Cutting Veg (TCV) is an eco-social enterprise rooted in organic farming. TCV runs four programs aimed at cultivating personal, social, environmental, and economic health. They cultivate multiple acres of mixed vegetables, making organic food more accessible to vegetable lovers of Southern Ontario. In addition to produce sales, TCV runs the “Global Garlic Project.” Specifically, they grow approximately 20 varieties of garlic from around the world, including Polish, Persian, Italian, Russian, Korean, and Israeli. TCV also provides Food Coaching Services, which offers garden & composting project support, agri-business training, food-based workshops, and part-time farming internships. Finally, TCV offers one-on-one “Wellness Counselling” for individuals who want to take steps forward with their health and happiness. Collectively, these programs are helping TCV towards the achievement of its quadruple bottom line: Personal health, Social health, Environmental health, and Economic health. TCV is owned and managed by Daniel Hoffmann. Daniel is an Organic Farmer, Social Worker (BSW), Counsellor, and has been farming in B.C. and Ontario since 2000.
